Good Trouble
The one that takes five minutes and is worth them. Shaken hard twice, poured into a cold coupe, and left alone long enough for the foam to set before anyone touches it.
Ingredients
- Boombangh The Good50 ml
- Lime juice, fresh22 ml
- Cane syrup (1:1)18 ml
- Egg white1
- Angostura bitters, to finish3 drops
Method
- Combine everything except the bitters in a shaker with no ice, and shake hard for fifteen seconds. This is what builds the foam.
- Add ice and shake again until the tin is too cold to hold, about twelve seconds.
- Double-strain into a chilled coupe.
- Let it stand a full minute. The head needs the time to set, and it will not hold if you rush it.
- Drop the bitters onto the foam and draw a line through them with a cocktail stick.
Aquafaba works in place of the egg white at about 20 ml, and holds its head slightly longer.
